Many years ago my wife accidentally put a couple of ripples in the edge of a flexible Sabatier filleting knife. Recently I came across this knife and with this stone, I have managed to get a near pristine edge. I only removed enough metal to make a near clean cut, not remove all evidence of the damage, but it is now back in operation for the first time in years. I should have done this years ago.Next job is a cleaver with a chipped edge - however a coarser grit will be needed for this and the steel it is made from looks more of a challenge.This is 'not quite' as agressive as my Grandfather's hand cranked rotary whetstone, so not much use for heavier knives such as beet trimmers, but certainly gets results for the right task!As a bonus, it is quite theraputic as restoration has to be done slowly and accurately, making sure that the damaged knife does not wear the stone unevenly.
