It has CmH2O Range of ±140.6 which is plenty, but you would need some adapter to actually insert the probe without damaging the cpap hose.. Perhaps an old hose could be pierced. Most cpap machines have pressure sensors built in.

Yes, static pressure would read as zero, a pressure increase would show as positive and a pressure decrease will show as a negative. You would have to take two separate readings to get the difference.
