when I used them in 5volt, and they tended to be on the high side of 5 volts under load(around 5.2) they work great as a BEC for RC. ^ volt seems closer. they didn't come with a sheet, I used them as-is, never looked around for any docs. 7.2 and 11 volts seem to work fine.

Are you sure you are testing from +5 to ground and not to + 9? Seems unlikely that two would be bad. Your battery chemistry should not matter.

The 5v side has a standard servo connector, the input side has nothing, just bare wire so you can solder to your power distribution board.

Depends on the amps and voltage required for the lights. I would also not purchase this one, I have purchased two and both were solder incorrectly. Look into the Turnigy, they are well built with less RF.

as long as you do not exceed the rated output of the ubec you should be ok to split the voltage however you wish.. once you overload it , it will fail..
