Pipe runs down the middle of the planks on both sides. Planks stand out 10 inches from the wall.

I do think it's possible. It goes together level by level, pretty confident you could leave one or two out without issue.

No, very sturdy with just drilling into the wall using the top holes. Drill into the stud in the drywall.
